About the Role
*Position Overview*
The Head Chef at The Irish Pub is responsible for overseeing the full operation of
the kitchen, ensuring high-quality food, consistency in preparation, and strict
adherence to hygiene and safety standards.
The role requires strong leadership, creativity, and the ability to manage a busy
kitchen environment while delivering authentic Irish pub classics and international
pub-style dishes that enhance the overall guest experience.
*Key Responsibilities*
Culinary & Kitchen Operations
- Plan, design, and execute menus reflecting traditional Irish pub dishes, comfort food, and seasonal specials.
- Ensure all meals are prepared, cooked, and presented according to the standards of The Irish Pub.
- Maintain consistency in taste, portion size, and presentation across all dishes.
- Supervise food preparation and ensure efficient kitchen operations during service hours.
- Ensure full compliance with food safety, hygiene, and HACCP standards.
- Monitor stock levels, food storage, and proper handling of ingredients.
- Carry out any other related duties as may reasonably be assigned by Management in accordance with the operational requirements of the establishment.
- To establish and maintain an efficient kitchen workflow across any outlet of The Irish, including proper placement of equipment, stations, and preparation areas to facilitate smooth operations.
*Team Leadership*
- Lead, supervise, and train the kitchen brigade, including chefs, cooks, and kitchen assistants.
- Prepare and manage kitchen staff schedules in coordination with management.
- Foster a positive, disciplined, and collaborative working environment in the kitchen.
- Ensure staff maintain high standards of cleanliness, professionalism, and teamwork.
*Financial & Cost Control*
- Control food costs and kitchen expenses through proper stock management and waste reduction.
- Manage inventory levels and coordinate with suppliers to ensure quality ingredients.
- Assist management with menu costing, pricing strategies, and budgeting.
- Monitor kitchen performance in relation to sales and operational costs.
- Prepare, analyse, and report the weekly Kitchen BSC performance figures and participate in the Management Meeting held every Thursday.
- To familiarize and ensure proper use and smooth integration of The Irish Pub’s “Dine-In” POS system and facilitate its proper use and integration within the kitchen operations.
*Quality & Standards*
- Maintain high standards of food quality, hygiene, and kitchen organization at all times.
- Introduce new dishes, specials, and seasonal menu items aligned with the concept of The Irish Pub. Any recipes, menus, or culinary concepts developed during the course of employment shall be the exclusive property of The Irish. Conduct regular checks to ensure the kitchen remains clean, safe, and fully operational.
- Ensure compliance with health, safety, and food handling regulations.
*Requirements:*
- Proven experience as a Head Chef or Senior Chef, preferably in a pub, bar- restaurant, or casual dining establishment.
- Strong knowledge of Irish pub cuisine and international comfort food.
- Excellent leadership, communication, and team management skills.
- Ability to perform under pressure in a fast-paced hospitality environment.
- Good knowledge of food safety, kitchen operations, and stock control systems.
