Job Purpose:
The commis chef is to assist in the preparation, cooking, and presentation of food dishes to a high standard under the supervision of senior chefs, such as the chef de partie or head chef. The commis chef supports kitchen operations by preparing ingredients, seasoning, cooking components of dishes, maintaining cleanliness, managing inventory, and ensuring compliance with food safety and hygiene standards.
Key duties :
- Comply with Quality Management System and S&H regulations and policies.
- Collect ordered food items from store.
- Check all products (dry, frozen and fresh provision) collected by the kitchen helper or assistant cook.
- Prepare mise-en-place of all foodstuffs as appropriate.
- Prepare the plate as per instructions from superior.
- Participate in presentation & decoration of buffet.
- Cook as per fiches techniques.
- Keep workplace tidy, maintain a clean and sanitary work area including tables, shelves, walls, equipment, floor, storage areas and refrigerators, in line with hygiene norms and Health and safety security procedures.
- Check station upon arrival to determine status of food items, equipment, and safety issues. Assist immediate superior in the preparation and presentation of food items in specific workstation/ outlet.
- Assist in preparing and producing quality food timeously under hygienic conditions.
- Monitor to labelling and traceability system of the hotel.
- Be entirely flexible and rotate within the different sections of the Kitchen if assigned.
- Attend daily Kitchen briefing.
- Any other cognate duties as assigned.
Qualifications and Skills:
- Minimum of 1-2 years of experience as a commis role in a hotel or high-volume restaurant.
- Nc3 would be an advantage
- Demonstrates enthusiasm and creativity in food preparation and presentation, with a genuine passion for culinary arts.
- Ensures precision in following recipes, portion control, and maintaining high standards of food quality and hygiene.
- Understands the importance of contributing to a positive dining experience by supporting timely and quality food service.
- Maintains an optimistic, proactive, and professional demeanor, even during busy or stressful periods.
- Works collaboratively with kitchen and service staff to ensure efficient and harmonious operations.
- Acts in good faith and consistently prioritizes the best interests of the company.
- Willing and able to work various shifts, including evenings, weekends, and holidays.
- Maintains a neat, professional appearance and communicates clearly and respectfully with colleagues and supervisors.
